How to Buy Grass-Finished Beef Directly from a Farm

How to compare cuts, bundles, freezer beef, pricing, delivery, and ranch standards

Start with Your Household’s Buying Pattern

Farm-direct beef may be offered by individual cut, bundle, quarter, half, or whole animal. Availability depends on the ranch, processor, herd size, and harvest schedule.

Quick answer: Buy cuts or a small bundle when you want flexibility. Consider bulk beef only when your household has freezer space, uses a wide variety of cuts, and understands the pricing method.

Retail Cuts, Bundles, and Bulk Beef

  • Individual cuts: easy to try and simple to budget.
  • Bundles: a practical assortment with fewer decisions.
  • Quarter or half beef: broad variety and a larger upfront commitment.
  • Whole beef: maximum volume and coordination with the farm and processor.

Dos Lobos currently offers Dexter beef primarily by the individual retail cut because our supply is limited.  We do not have plans to offer half or whole beef shares for the time being, but can happily refer you to other farms in the area that do!  Check out our Wise County Farm Directory to see what's available.

Compare Price, Yield, Cut Mix, and Freezer Space

Bulk beef may be priced from live weight, hanging weight, packaged weight, or a combination of animal and processing charges. Ask exactly which weight sets the price, what fees are separate, and what packaged yield range is realistic. Bone, fat, moisture loss, organ selection, and cutting instructions all affect take-home weight.

Before reserving a quarter, half, or whole beef, review the expected cut mix and confirm freezer capacity. Customers who want only steaks or a narrow set of cuts may be better served by retail cuts or a curated bundle.

Verify the Ranch’s Claims

Ask whether cattle are forage-finished through harvest, how hay and supplements are handled, what health interventions are used, and where processing occurs. Request clarity about ā€œgrass-fed,ā€ ā€œregenerative,ā€ ā€œlocal,ā€ and ā€œnaturalā€ rather than assuming standardized meanings.

A transparent ranch should also explain seasonality and limited supply.
