Pasture-Raised Thanksgiving Turkey Guide

From seasonal reservation and pickup through thawing, roasting, resting, and leftovers

Reserve for the Real Season

Pasture-raised turkeys are seasonal agricultural products, not unlimited year-round inventory. Reservation dates, expected weight ranges, processing, pricing, pickup, and delivery methods should be confirmed for the current year.

Plan Size with Flexibility

Birds grow to a range rather than an exact finished weight. Estimate guests, appetites, side dishes, leftovers, oven size, pan size, and thawing space.  Plan to order extra turkeys for large crowds and if it needs to be shipped, plan for packaging and shipping costs for multiple boxes.

Dos Lobos Ranch offers shipping of our USDA inspected pasture raised turkeys. Turkeys generally require our largest box (14x14x14). Multiple turkeys will need their own box and shipping label, so plan for pricing for more than one package.

Maintain the Cold Chain

Bring appropriate cold storage to pickup, refrigerate or freeze promptly, and allow sufficient refrigerator-thawing time. A large frozen bird can require several days, so do not wait until the holiday morning.

Cook by Temperature and Anatomy

Use an accurate thermometer in the appropriate thick areas without touching bone. Breast and leg meat cook differently; technique, trussing, shielding, spatchcocking, or separating parts can help manage the difference.

Rest and Store Leftovers Safely

Rest the bird before carving, then refrigerate leftovers promptly in shallow containers. Check current turkey reservations or ask about this season.

Frequently Asked Questions

When should I reserve a pasture-raised turkey?

Reserve when the farm opens the current season. Quantities, dates, weights, and fulfillment methods vary each year.

How much turkey should I plan per person?

Use a planning range that accounts for bone, side dishes, appetites, children, and desired leftovers rather than one exact number.

How long does a frozen turkey take to thaw?

Time depends on weight and refrigerator temperature. Large birds can require several days; follow current food-safety guidance.

Does pasture-raised turkey cook faster?

It may differ in size, body composition, and moisture, but equipment, preparation, bird shape, and actual temperature determine timing.
