Dexter cattle are a compact heritage breed developed in Ireland and valued for adaptability, maternal ability, useful beef, and suitability for smaller acreages. Their smaller frame can make handling, stocking, and harvest portions more practical, but they still require sound fencing, forage, minerals, water, and experienced management.

Size, Temperament and Pasture Fit

Dexters are smaller than many commercial beef breeds, not miniature pets. Mature size varies by sex, bloodline, nutrition, and selection. Calm, workable cattle are desirable, but temperament must be evaluated in the individual animal and its family.

Dexter Beef and Grass Finishing

Dexters can produce flavorful beef with useful marbling and practical carcass sizes. At Dos Lobos Ranch, cattle are grass-fed and grass-finished. Forage quality, age, genetics, health, harvest timing, processing, aging, and cooking all influence tenderness and flavor.

Grass-Fed and Grass-Finished Genetics

Regenerative ranchers are finding out the hard way that purely grass-adapted cattle are hard to come by, especially in the popular beef breeds.  Dexters have largely been left alone instead of being bred to fit a certain feeding system such as Angus cattle.  While some Dexter lines have struggled at first on our grass-only system, others have been able to thrive on it, even on North Texas coastal pasture.  Once adapted to grass-only, Dexters seem to thrive and produce a moderate sized carcass of premium, grass-finished beef.

Registration and pedigree establish identity and ancestry; they do not replace evaluation. Feet, legs, udder, fertility, calving history, disposition, growth, body capacity, and genetic information should work together in a breeding decision.
